What We Eat in a Week – Successfully Eating Gluten-Free, Dairy-Free, and Egg-Free (15+ Recipes)

Oh, holy cow you guys. I think I might be allergic to dairy (cue sarcastic half-hearted woo’s). I currently am working on eating dairy-free and egg-free (already an allergen I just didn’t take it as seriously as I should’ve) for the next four weeks to test the waters, and we’ve been gluten-free for a couple years now. When thinking of going dairy-free it sounded really daunting, not gonna lie.

Lightly Spiced Roasted Butternut Squash Soup Recipe (gluten-free)

You better get ready, because I’m going full-Fall right now. Yesterday it was finally cold enough for us to flip from AC to heat and I made soup (oh the heavens were shining down on me that day)! I’m celebrating while I can though because tomorrow it’s back up to 80°F…but I already broke out the scarves so it looks like our AC bill is about to go up! Did I mention that this soup is the one I made yesterday? This recipe is the most quintessential cold-weather recipe I can think of. It’s delicate and light but still has a beautiful velvety texture. The soup is a bit sweet and overall lightly spiced for a bit of warmth on the tongue. Just click through already, you know you want to make the darn thing!

P.S. Love Mom: Pot Roast (A Passed Down Recipe)

Growing up this was one of the meals I never really craved but didn’t hate having either. However, when I went and got my first apartment, moved out, and started to see family less, I called my mom to give me the recipe. This dish means a lot to me and just feels like a big hug from her whenever I make it. I was a little shocked to find out that this recipe is so easy and just gives me more of a reason to want to make it often.

The Best Ever Mac and Cheese Recipe (Gluten-Free)

Carbs and cheese, what’s not to love about this classic dish? This recipe is bounds above anything you could get in a box, and honestly, not a whole lot harder. Boil some noodles, make a cheese sauce, and if you like you could just stop there, or top with cheese and bake it for even more cheesy goodness. What are you waiting for?

Not Your Mama’s Meatloaf Recipe (gluten-free)

Now before you roll your eyes and start scrolling off to somewhere else on the internet, hear me out. I didn’t grow up on meatloaf, so when I made it, I didn’t know it was supposed to be excessively greasy, dry, and be forced upon a family at least once a week. Okay, I’m kidding, but seriously, this stuff is darn delicious and doesn’t fit meatloaf stereotypes. This recipe is full of flavor, easy to whip up, and is one of Derek’s favorites.

3 Ingredient Korean BBQ Style Grilled Pork Kebabs (gluten-free option)

Get ready for some mouthwatering, tummy-rumbling food photos. I am absolutely in love with this recipe. It is easy and delicious. Only 3 ingredients! The pork is tender, juicy and almost steak-like. The Korean BBQ sauce is sweet, soy-saucy, and has a tiny bit of spice (but isn’t hot on the tongue). Honestly, Korean BBQ is unlike anything I have ever had before. I’ve been kind of tired of the overly sweet and tangy American style BBQ sauce and am glad there is a new savory alternative we have clung to.

Quick Coconut Curry Buttermilk Chicken Strips (gluten-free option)

This is the flavor combo you have been looking for. It is sweet, savory, spiced (not spicy), and overall a winner. This recipe is very easy and was made to adapt to our gluten-free (GF) lifestyle, but can easily be gluten-filled. Plus, if you have little ones that might not like coconut or curry, it is really easy to give them plain battered chicken strips and give yourself the delicious coconut curried adult version!
